While cooking, you learn about different cuisines. What I’ve learned is that every country and region has some type of what I would call a meatball. The only thing that they all have in common is that you need a ground or minced “protein”. The protein is defined as ground, beef, lamb, fish, poultry, pork and even any type of grain that resembles ground meat like for instance bulgur. From this starting point is where every country and region becomes unique and contrasting where spices and herbs are intertwined along with cooking preparations and serving presentations. These culturally interesting meatballs can be simmered in a broth or sauce, cooked on a stick or encased in dough. Some are served with a cool yogurt sauce or in a fiery coconut chili soup and others grilled or fried and served alongside fresh crunchy vegetables. The possibilities are endless and is what makes food so interesting and cool. Imagine being able to visit a different region of the world and experiencing their version of a generic word meatball without ever hopping on a plane. I will say this first, I have never traveled to the Middle East and tasted authentic Kofta. I have eaten it here in America and made it plenty of times and usually different each time. I will share with you a quick and easy Chicken Kofta. However, as your own chef you can be inspired to create your recipe how you like and with what ingredients you have.
