The recipe below is for 2 people.
2-3 bratwurst
1cup drained sauerkraut
1/4c onion sliced
2Tbsp butter/lard/bacon fat
1T sliced bacon
3/4c grated granny smith apple
1cup liquid-chicken stock or apple juice or water
1 bay leaf
3ea juniper berry or 1Tbsp caraway seed
1/2c grated potato
Salt and pepper to taste
In a cold pan add the lard and bacon and heat on medium for 4 minutes and then add the onions and cook for an additional 4-5 minutes until bacon fat has rendered some and the onions are wilted. Add the sauerkraut and seasonings and bring to a simmer then nestle the sausages amongst everything and simmer for 45 minutes. When the sausages become a little tender or not so firm add the grated potatoes and allow to simmer for another 30 minutes. Taste and season how you like. The apples should bring a fruity sweetness to the sauerkraut and the potatoes will thicken everything up nicely.
Enjoy! –Peter
