This easy bratwurst and apple sauerkraut recipe is the perfect fall comfort food. Gently braised with potatoes for a hearty, flavorful meal you can make for one or a crowd.
On a chilly, damp day as Hurricane Idalia approached, I stepped inside craving something warm and satisfying. A quick look through the refrigerator and pantry led me to one of my favorite seasonal comfort foods: bratwurst with sauerkraut.
There are countless ways to prepare bratwurst and sauerkraut—each household and region adding its own twist. The beauty of this dish is its flexibility; you can use what you have on hand and still end up with something delicious.
For this version, I made a sweet-and-savory apple sauerkraut as the base for the bratwursts to gently braise in, then added diced potatoes to soak up the flavorful apple juices and thicken the dish naturally. The result is an easy, hearty, and deeply comforting meal that works just as well for one person as it does for a table of ten.
